actually the tongue and the brain. since, we use the tongue to send the "taste" feeling to the brain, for it to figured out.

some myths, may say that the nose is one of the organs that helps use taste food, which is true, mostly...

because, it is common in human culture to smell the food before eating it which actually helps us have a hypothesis of what the food would taste like.

e.g.

soda - taste like fizzy liquid sugar

        - smells like cold liquid sugar

durian - tastes sweet or sour (depends either raw or ripe)

           - smells bad
